Ikan Asin Sibolga (Dried Fish with Torch Ginger Stir Fry)


Kalau anda menyukai ikan asin dan kincung (kecombrang) seperti saya, inilah adalah masakan sederhana yang mudah dibuat dan enak rasanya. Saya mendapat resep ini ketika Titin, teman kami yang pandai memasak…, menghidangkannya kepada kami ini. Seperti biasa saya meminta resepnya dan mencobanya sendiri. 
Enak sekali sebagai teman makan dengan nasi hangat dan juga saya coba juga dengan nasi goreng terasi…., yummm memang enak. Harum kincung ditambah sereh, ikan asin krispi dan gurih…., tidak perlu lauk lain lagi.

Most Indonesian love salted dried fish. North Sumatra specially, Sibolga produce one of the best kind of them. The famous Teri Medan (Medan baby dried anchovy) also produced there as well as many type that you can find in the market. Some are affordable and some are pricey. The split dried fish (ikan asin belah) is reasonable priced compared to others. 

My friend, Titin, served this dish for lunch the other day and soon become our favourite as most of us love salted dried fish plus of course the addition of aromatic torch ginger, makes the taste perfect. This is her recipe that I modified slightly. It is hot, salty and aromatic, if you like salted dried fish and torch ginger, you should try this.

Bahan-Bahan / Ingredients

200 gr ikan asin belah
200 gr split dried fish

2 kincung, rajang halus
2 torch ginger  bud, sliced

80 gr cabe merah, rajang miring
80 gr red chilli, sliced

80 gr bawang merah, rajang halus
80 gr shallots, sliced

2 siung bawang putih, rajang halus
2 garlic, sliced

1 sereh
1 lemon grass

1 sdt gula
1 tsp sugar

2 sdm  cuka
3 tbsp vinegar

Garam secukupnya
salt to taste

minyak untuk menumis dan menggoreng

Cara membuat  /  Preparations

Potong-potong ikan asin belah, kemudian rendam sebentar untuk mengurangi rasa asin. Cuci kemudian tiriskan.
Cut the dried fish in pieces, soak for a short time to reduce the salt. Wash and drain

Goreng ikan asin sampai benar-benar kering, sisihkan
Deep fry the fish until dry and crispy, set aside

Tumis semua bumbu sampai kering atau setengah kering tergantung selera anda (terakhir gula dan cuka)
Saute all ingredients until half dry or dry according to your taste (sugar and vinegar is the last)

Campurkan ikan asin sewaktu akan dimakan, karena jika bumbu setengah kering, ikan asin akan menjadi liat.
Mix the fried fish with the spices only when you are ready to eat, as the fried fish will go soft  if the spices is not dry enough.
