Kolak Labu Kuning (Sweet Pumpkin in Coconut Milk and Palm Sugar)


This is another way of preparing pumpkin. It is simple to make and no fuss. If you like pumpkin and coconut milk, this is definitely a perfect pudding after spicy food.

Banyak jenis kolak dalam makanan Nusantara, kolak labu adalah salah satunya. Rasanya enak dan mudah dibuat. 

Kalau sedang ke pasar atau supermarket dan melihat labu yang berwarna sangat kuning, cobalah resep sederhana ini. Anda pasti menyukainya.

Bahan-bahan / ingredients

500 gr labu kuning
500 gr pumpkin

150 gr gula merah
150 gr palm sugar

100 ml santan kental
100 ml thick coconut  milk

200 ml santan encer atau air
200 ml light coconut milk or water

2 lembar pandan atau 1/2 sdt vanili
2 pandan leaves or 1/2 tsp vanilla

1/2 tsp vanilli (optional)
1/2 sdt vanilla

Kupas labu dan potong-potong
Peel the pumpkin and cut into pieces

Cara memasak /  preparations

Didihkan labu kuning, pandan dan santan encer atau air selama 5 menit kemudian masukkan gula merah.
Bring to a boil the pumpkin pieces and pandan leaves with light coconut milk  or water for 5 minutes then add the palm sugar.


Continue cooking until just about getting tender, then add thick coconut milk.
Lanjutkan memasak sampai agak lembut, kemudian tambahkan santan kental

Jika labu cukup lembut, matikan api. Sekarang sudah bisa disajikan, tetapi sebaiknya didinginkan dulu kemudian disimpan dalam kulkas selama satu malam atau lebih
When the pumpkin soft enough, turn the heat off. It is now ready to serve but it is better to leave it cool and keep in the fridge over night or more.

Keesokan harinya, panaskan kolak dan sajikan. Rasanya pasti lebih enak karena labu sudah menyerap gula dan santan.
The next day, reheat the pumpkin and serve. The taste is definitely better as the pumpkin absorbs the sugar and coconut milk.
Serve as pudding
