Yong Tau Fu (Tofu and Fish Balls Soup)




Early '90 yong tau fu was introduced in restaurant and soon got popular. "The place" to have it (then) was restaurant Apollo in Deli Plaza. I always enjoyed it every time I went there. The soup was clear and refreshing, it is light and filling at the same time. I used to put enough chill in it. Yes it was the day. There is one Apollo restaurant now in Sun Plaza, it is not the same but still have yong tau fu. I things this recipe is just as good as apollo used to be……

Di awal tahun 90 an, yong tau fu adalah makanan baru di restauarant dan langsung disukai banyak orang. Tempat yang paling baik "waktu itu" adalah restaurant Apollo di Deli Plaza. Sup beningnya sangat segar dan enak rasanya apalagi kalau ditambah cabe….. Setelah Deli Plaza tutup sekarang ada satu restaurant Apollo di Sun Plaza, tidak sama seperti dulu tapi masih menjual yong tau fu. Jika mau bernostalgia dan mau meluangkan waktu bisa mencoba resep ini.


Bahan / Ingredients

Tofu puff
Tahu goreng

Firm tofu
Tahu Cina

Bitter gourd
Pari

red peppers
cabe merah

Lettuce leaves
Daun selada

500 gr Fish paste
500 gr adonan ikan 

2 Spring onions, finely sliced
2 Daun bawang, rajang halus

2 tbsp Corn starch
2 sdm Tepung maizena

100 ml ice cold water
100 ml air es

Salt and pepper to taste
garam dan merica secukupnya


untuk kuah / for the soup


2 L Kaldu ayam bening
2 L Clear chicken stock

fried garlic
bawang putih goreng

light soy sauce
kecap asin

salt and pepper to taste
merica dan garam secukupnya

star anise
bunga lawang

Spring onion or cilantro
daun bawang atau daun ketumbar


Preparation /  Cara memasak

dissolve 2 tbsp corn starch in 100 ml water, add the spring onion, salt and pepper, then mix well with the other 250 gr of fish paste. This will be the filling for the tofu and the bitter gourd.
cairkan 2 sendok makan tepung maizena dalam 100 ml air es, masukkan daun bawang, garam dan merica kemudian campurkan dengan sisa adonan ikan 250 gr. Ini akan menjadi adonan isi untuk tahu, cabe dan pari.

Siapkan Sup dengan mendidihkan kaldu ayam dan masukkan semua bumbu. Kemudian kecilkan api biarkan selama beberapa menit.
Mean while make the soup by boiling the chicken stock with all the ingredients then reduce the heat and simmer for a while for the flavour to develop.

Serve all the condiment in hot clear soup with salad leaves 
Sajikan isi yong tau fu dalam sup panas dan daun salad.
