These are typical fruits we always use as juice or punch


Kweni  (Type of mango)




Kweni Juice, most ordered juice in any eatery places

Here is my version :

2           Kweni, peel and take the flesh ( about 1 cup)
2   cup  Ice cold Water
3   tsp   sugar ( use honey for substitute or don't put at all )
3   tsp   lime or lemon juice

Put all ingredients in a blender till all smooth, pour in a glass ........  it is ready 
(serve 2)

Tamarillo Syrup

Terong Belanda (Tamarillo)


Tamarillo is a relative of the potato, tomato, eggplant and capsicum pepper, the tree tomato is native to Central and South America.  Listed among the lost foods of the Incas and known as the ‘tomate de arbol’, tree tomatoes have all but disappeared from their native habitat. You can make all kind of recipe, but in Medan it is famous as a " jus terong Belanda " and sold widely also as syrup. Here is the my recipe 


Ingredients 
Bahan

1300    gr     Tamarillo, washed and drain (terong Belanda, dicuci dan tiriskan)
  400    gr     Sugar ( gula )
  250    ml    Water (air)

Method 
Cara memasak




  • Half the fruit, use a tea spoon take the flesh of the fruit (will leave about 800 gr).
  • Belah buah menjadi dua, dengan sendok teh keluarkan daging buah





  • Put the fruit flesh and sugar into a saucepan, bring it to boil
  • Masukkan daging buah dan gula ke dalam panci, masak sampai mendidih




  • Add on the sugar. Stir occasionally. Press the flesh gently with the back of a ladle or if you have potato masher is great. Leave it to simmer  for 40 minutes.  The colour will turns red.
  • Tambahkan gula. Sekali-sekali diaduk. Tekan-tekan daging buah dengan adukan sehingga hancur. Lanjutkan memasak selama 40 menit dengan api kecil. Daging buah akan semua hancur dan akan berubah berwarna merah.




  • Once it is ready, leave it to cool. Strain the juice. 
  • Setelah masak, biarkan sampai dingin. Saring. 



  • Use the back of a spoon to press the solid against the strainer.
  • Gunakan sendok untuk menekan daging buah agar lebih mudah keluar saringan.
  • This will make 700 ml syrup
  • Ini akan menghasilkan 700 ml syrup


  • Put the syrup in a sterilised bottle, keep it in fridge, ready to use.
  • Masukkan syrup ke dalam botol yang telah disterilkan, simpan di dalam kulkas. Siap digunakan
  • To make a glass of refreshing tamarillo juice, put 4 tbs of syrup in a glass, add ice cold water until the glass is full. Stir, add ice cube in.
  • Untuk membuat satu gelas jus terong belanda, masukkan 4 sdm syrup kemudian tambahkan air dingin. Aduk siap disajikan, jika suka tambahkan es batu



Passion Fruit Syrup 





Markisah (Passion Fruits) 


This is the most popular syrup (Cordial) that is always served in Hari Raya or New Years Day, when you visit your relatives' or friends' house.

This is my own recipe, with no preservatives or flavour enhancer.

Ingredients :

1700    gr   Fresh passion fruit, washed and drain 
  500    gr   Sugar
  250    ml  Water

Method :


  • Cut the passion fruits in halves and  remove the content into a bowl (will produce 700 gr)
  • Belah buah dan keluarkan isinya (akan menjadi 700 gr isi ) 



  • Put all the content, water and sugar into a saucepan and boil for 30 minutes on medium heat, stir occasionally
  • Masukkan isi, air dan gula kemudian rebus selama 30 menit diatas api sedang sambil sekali-sekali diaduk. 
  • Turn the heat off, leave it to cool
  • Matikan api, biarkan sampai benar-benar dingin



  • Strain the juice, this mixture will make 600 ml thick syrup 
  • Setelah dingin dapat disaring, akan menghasilkan 600 ml syrup



  • Keep the syrup in well sterilised bottle in keep in the fridge
  • Masukkan syrup ke dalam botol yang telah disterilkan ke dalam kulkas
  • To make a nice cold drink, put 4 tbs of Passion fruit syrup and add ice cold water, ready to serve
  • Untuk membuat asatu gelas minuman, masukkan 4 sdm syrup markisah dan tambah dengan air dingin sampai gelas penuh, siap dihidangkan.






Rosella (Hibiscus)



Red Guava Juice

Some believe this juice will help to recover from Dengue Fever. Apart from that it is a delicious juice.

Try this :

1 1/2        Red guava ( peel and remove the seeds)
1      cup  Ice cold Water
2      tsp   sugar ( use honey for substitute or don't put at all )
2      tsp   lime or lemon juice

Put all ingredients in a blender till all smooth, pour in a glass ........  it is ready 
(serve 2 smaller glass)




Air Lengkong (Cincau)

This is very easy to prepare :

250   gr     Cincau (Lengkong) diced ( 1 x 1 cm)
                 Syrup, as much or as little as you prefer
2000 ml    Ice cold water

Put them all together in a bowl or jug, stir gently and ready to serve. You may add ice cubes to make even colder, even refreshing




Soursop  Sirsak  


This juice is believed contain a substance that will help to heal cancer. The leaves of this tree is even more potent. 

To make the Juice :

1   cup  Soursop flesh ( after removing the seeds)
2   cup  Ice cold Water
4   tsp   sugar ( use honey for substitute or don't put at all )
4   tsp   lime or lemon juice

Put all ingredients in a blender till all smooth, pour in a glass ........  it is ready 
(serve 2)


Nata De Coco and Kum Quat 





This refreshment is very simple to prepare yet it is very refreshing. It is always popular everytime I serve this in a gathering and always be a topic of conversation because of the unusual combinations. When  yellow melon is in season you can add that in, it'll be more refreshing.

Ingredients :

1000  gr    Kara Slice Nata de Coco ( 1 package )
  250  gr    Kum Quat, sliced and remove the pips
  200 ml    Syrup
      4         Lime ( squeeze the juice)
  700 ml    Ice Cold Water
                 Ice cube

Place all ingredient in a bowl, stir gently and ready to serve

The Syrup

500  gr   Sugar
500 ml   Water

Boiled till the sugar dissolved, leave it to simmer for a few minutes and remove the impurity.
Leave it to cool and store in the fridge ready to use any time.
