Membuat Lontong ( How to Make Rice Cake )


Di Medan lontong siap saji banyak dijual. Kelihatan bagus, hijau diluar dan lembut didalam. Dapat dimengerti mengapa kebanyakan orang memilih untuk membeli saja, karena memang memerlukan waktu yang lama untuk merebusnya dan rumit. Saya memakai presto memasaknya, jadi cukup 2 jam saja (masih lama juga ya....) dibandingkan dengan cara memasak tradisional yang perlu sedikitnya 4 jam, ada yang sampai 8 jam dengan alasan lontong akan tahan lama walau tanpa pengawet.


Ingredients
Bahan

1/2 kg  Beras
Daun pisang
Lidi atau tusuk gigi
Sedikit garam

(Menjadi 16 gulung lontong)

Cara membuat


                          


  • Untuk membuat lontong gunakan beras yang berkualitas sedang (Sebaiknya tidak digunakan beras Basmati atau Thai Jasmin). Beras lokal berkualitas sedang cenderung mengembang dan tekstur lontong lembut.
  • Cuci beras, tiriskan



  • Potong daun pisang sepanjang 25 cm
  • Buat gulungan dengan diameter 4-5 cm, tutup dengan lidi atau tusuk gigi disalah satu ujungnya




  • Dengan bantuan gagang kayu bentuk bagian ujung daun sehingga terlihat lebih bulat



  • Isi dengan beras 1/4 bagian dari daun. Terlalu banyak beras lontong menjadi keras bahkan tidak jadi (bagian tengah lontong menjadi nasi) dan jika terlalu banyak lontong menjadi lunak.




  • Masukkan lontong ke dalam panci presto tambahkan air sampai menutupi lontong.
  • Hidup api dengan api besar, setelah tombol presto naik, kecilkan api, lanjutkan memasak selama 2 jam atau lebih sedikit





  • Setelah 2 jam, keluarkan lontong dari panci dan tiriskan, biarkan sampai benar-benar dingin sebelum dipotong.

Ketupat Pulut (Sticky Rice Pouch Cake)




Ketupat pulut (ketan) adalah salah satu sajian yang biasa dihidangkan pada Hari Raya, tapi sekarang ini dapat dibeli kapan saja ditoko-toko penjual makanan ringan. Untuk memasaknya biasanya membutuhkan waktu yang lama, tapi kali ini saya menggunakan Pressure Cooker. Surprise.... surprise hanya memerlukan waktu 45 menit...., silahkan mencoba

Ingredients
Bahan

  500   gr       Beras pulut (ketan), cuci bersih, tiriskan
1200   ml      Santan dari satu kelapa
      3   helai  Pandan
Garam secukupnya
(Menghasilkan 15 ketupat kecil)

Cara membuat

Ketupat dapat dibeli di pasar, kali ini saya membuatnya sendiri.... yes, it took a long time to do it...




Bahan Ketupat Pulut




Masukkan beras dengan sendok kecil dari bagian tengah atas ketupat, seperti gambar di atas. Isi kira-kira 3/4 bagian atau lebih sedikit karena beras pulut tidak banyak mengembang.
Isi semua ketupat sampai pulut habis.




Masukkan santan dan pandan ke dalam panci presto, tambah garam, cicipi




Masukkan ketupat, ikat bagian atasnya menjadi satu. Letakkan sedemikian rupa 
sehingga ketupat tenggelam dalam santan.




Setelah masak dan masih ada sisa santan, pindahkan ke dalam wajan.

Aduk terus, sampai semua cairan mengering. Matikan Api. Biarkan sampai dingin.



Pindahkan ke piring, siap disajikan. Dapat dimakan begitu saja tapi lebih lezat lagi jika ditemani rendang.  Ya, gurih sekali.....

Rujak Medan (Medan Fruit Salad)



Siapa yang tak suka rujak Medan? Rujak Medan biasanya dijual di rombong-rombong. Ada beberapa tempat sangat terkenal enaknya, Rujak Kolam dekat Mesjid Raya Medan, Rujak Madu di jl Tarumanegara dan beberapa tempat lainnya. Tapi resep ini tak kalah enaknya. Undang teman-teman untuk menikmatinya bersama....

Ingredients
Bahan

Pada dasarnya semua buah favorit anda bisa digunakan, saya menggunakan buah yang saya temui di pasar hari ini.

Nenas
Pepaya mengkal
Jambu air
Timun
Bengkuang
Belimbing
Jambu kelutuk

Bumbu yang dihaluskan

100  gr   Kacang tanah sangrai
200  gr   Gula merah, dapat ditambah jika suka lebih kental
  10  gr   Asam Jawa
1/2   sdt  Terasi
   1   bh   Pisang kelutuk (batu)
10           Cabe rawit (dapat dikurangi atau ditambah sesuai selera)
Garam secukupnya
  2   iris   Nenas

Method
Cara membuat

  • Lumatkan asam Jawa dalam air, secukupnya
  • Giling terlebih dahulu, garam, cabe rawit, terasi dan pisang kelutuk sampai halus atau sesuai selera
  • Kemudian tambahkan gula merah yang telah disisir (dibeberapa tempat gula sudah dimasak dengan air sampai kental terlebih dahulu, mungkin supaya penjual rujak tidak terlalu lelah menggiling atau alasan lainnya, supaya setelah masak gula dapat disaring, karena kadang-kadang gula merah ada yang kurang bersih)
  • Masukkan air asam, cicipi sesuai selera
  • Giling dan aduk rata
  • Baru sekarang masukkan kacang sangrai, giling kasar



  • Potong buah-buah yang tersedia
  • Letakkan buah pilihan anda di atas piring, siram dengan bumbu giling.... dapat ditambah kacang tanah sangrai extra... mmmmm nyam....nyam

Nasi Tumpeng Mini (Individual Nasi Tumpeng)




Few days ago, we have 10 people over for sitting down dinner from various country. It took a while to think of suitable and simple menu with Indonesian theme. Eventually this "Nasi Tumpeng" idea came. 

Wikipedia : Tumpeng is a cone-shaped rice dish like mountain with its side dishes (vegetables and meat). Traditionally featured in the slamatan ceremony, the cone shape of rice is made by using cone-shaped weaved bamboo container. The rice itself could be plain steam rice, uduk rice (cooked with coconut milk), or yellow rice (uduk rice colored with kunyit (turmeric)).

History and tradition
People in JavaBali and Madura usually make Tumpeng to celebrate important event. However, all Indonesians are familiar with Tumpeng. The philosophy of Tumpeng is related to the geographical condition of Indonesia, especially Java as fertile island with numerous mountains and volcanos. Tumpeng dated back to ancient Indonesian tradition that revered mountains as the abode of ancestors and gods. The cone-shaped rice meant to mimics the holy mountain. The feast served as somekind of thanks giving for the abundance of harvest or any other blessings.
In gratitude ceremony (syukuran or slametan), after the people pray, the top of tumpeng is cut and delivered to the most important person. He or she may be the group leader, the oldest person, or the beloved one. Then, all people in the ceremony enjoy the tumpeng together. With tumpeng, people express the gratitude to God and appreciate togetherness and harmony.[2]
An annual ceremony involving tumpeng is commonly called 'tumpengan'. In many Indonesian cities, such as Yogyakarta, a tradition has been developed, the tumpengan ceremony a night before 17 August, the Indonesian independence day. The event is meant to pray for safety and welfare of the nation.

The cone shaped rice surrounded by assorted of Indonesian dishes, such as urap vegetables, fried chicken, empal gepuk (sweet and spicy fried beef), abon sapi (beef floss), semur (beef in sweet soy sauce), teri kacang (anchovy with peanuts), fried prawn, telur pindang (boiled marble egg), shredded omelette, tempe orek (sweet and dry fried tempeh), perkedel kentang (mashed potato fritters), perkedel jagung (corn fritters), sambal goreng ati (liver in chilli sauce), and many other things.

Today the dishes which accompany tumpeng can be of the host discretion, it can be vegetarian, to bbq seafood. Traditionally there should be a balance between vegetables, meat, seafood. The composition of a traditional Javanese tumpeng is more complex because the elements must balance one another according to the Javanese belief.

This is my own version of Tumpeng, I make it individual, so everyone has the tip and the side dishes can be presented better. The guests do not need to que....

What's on each plate ?

Nasi Kuning  (yellow rice)
Sambal udang pete ( Prawn sambal and stinky bean) (sambal paste, posted)
Rendang (posted)
Sliced omelet
Urap (posted)
Kering kentang (Spiced potato crisp)
Kerupuk udang (Prawn crackers)

Nasi Kuning

350  gr    Rice
    2         Salam leaves
 1/2  tsp  Turmeric  powder
125   ml  Coconut milk
150   ml  Water
    1         Pandan leaf or 1 stalk of lemon grass (or you can put both)
Salt to taste

Method :
  • Put all ingredients in a sauce pan
  • Mix well and cook on medium heat until all the liquid absorbed
  • Now, put the rice on a steamer, cook for 30 minutes or until rice is done.
  • While it is hot, put it in the mold.

Sambal udang

1  kg      Medium size prawns, peel the shell and remove the vein
2  lines   Stinky bean, peeled and halved
Enough oil for sauteing the paste

Method :
  • Shallow fry the prawns and mix with the paste.
  • Add the stinky beans and mix well until all the prawn covered with sambal. 


 Kering Kentang

1/2  kg  potato, peeled, quartered. Slice thinly and soak in brine, to stop colouring

Use the crispy spicy anchovy recipe for the paste, only replace anchovy with potato crisp

For the vegetables I used, bean sprout, iceberg lettuce and blanched cabbage 

Sliced Omelet

5  whole eggs
salt and pepper

Method :
  • Beat lightly the eggs and add salt and pepper.
  • Heat frying pan and smear with oil
  • Pour enough egg mixture onto the pan and move it in such away, that it will cover the pan. We want to make  very thin omelets
  • when the omelet is ready, put it on a plate
  • Repeat the process until the egg mixture finish
  • Roll the omelets together and then slice, the result should resemble noodles.
Traditionally, tumpeng mold were made from bamboo. Today it is made of aluminium and comes in different sizes. A couple month a go, I came across with this mini tumpeng mold.Voila... It is very useful...




Individual nasi tumpeng with banana leaf cover (to keep the rice warm and moist), and look pretty on the plate too.....

Garlic Peanuts ( Kacang Taujin )




Hari Raya is coming, every body is thinking what delicacy they want to serve for the guests when they come. This peanut is always there on the table amongst all other sweets and biscuits. Here is the simplest Kacang Taujin recipe yet fragrant and delicious


Ingredients
Bahan

    1    kg    Peanuts (ready peeled, slightly more pricey but save you a lot of time )
                  Kacang ( yang sudah dikupas, agak mahal tapi tidak makan banyak waktu)
100     g     Garlic
                  Bawang putih
  30     g     Celery leaves
                  Daun Seledri
   6    tsp     Salt
                  Garam


Method :
Cara memasak



  • Peel the garlic, wash and slice thinly
  • Kupas bawang putih, cuci dan rajang tipis



  • Wash the peanuts, drip dry. Mix well the peanuts, garlic and salt.
  • Cuci kacang, ditiriskan. Campur rata kacang tanah, bawang putih dan garam
  • Cover and let it marinate for at least 2 hours
  • Tutupi dan biarkan selama sedikitnya 2 jam



  • After marinated, add the celery leaves  and mix well
  • Setelah itu masukkan daun seledri dan campur rata




  • Fry in batches, on medium heat
  • Goreng dengan api sedang
  • Stir occasionally 
  • Aduk sekali-sekali



  • The garlic and celery leaves will be floating and ready earlier than the peanuts. Remove them from the oil and set aside.
  • Bawang putih dan daun seledri akan mengapung dan lebih cepat dari pada kacang. Angkat bawang putih dan seledri, tiriskan dan sisihkan. 
  • Once the peanuts are golden and ready, put on kitchen paper to reduce the excess oil.
  • Setelah kacang berwarna keemasan dan masak, tiriskan dan letakkan di atas kertas untuk mengurangi minyak
  • Crushed 1/4 of the garlic flakes. Mix well the peanuts, crushed garlic flake, celery leaves and the rest of of garlic flake.
  • Giling 1/4 bagian dari bawang putih goreng. Campur kacang, bawang putih giling, daun seledri goreng dan bawang putih goreng.
  • Leave to cool before putting it in air tight jar.
  • Biarkan benar-benar dingin sebelum dimasukkan ke dalam stoples
  • Serve to the guess when the come
  • Siap disajikan jika tamu datang



Ayam Pinadar ( Batak Style Chicken )






       Ingredients (A)

  • 4      tbsp   Oil for sauteing
  • 3 sdm minyak sayur
  • 1      kg     Native chicken ( Native chicken is leaner, tastier but a bit tougher, need longer cooking)
  • 1      kg     Ayam kampung, bagi beberapa bagian
  • 2     tbsp  Roast coconut, ground ( desicated coconut is a good substitude if fresh coconut is not available)
  • 2     sdm  Kelapa gongseng dan giling
  • 100 ml     Water
  • 100 ml     Air
  • 4              Kaffir lime leaves
  • 4     lbr    Daun jeruk
  • 3              Salam Leaves
  • Salt to taste
  • Garam secukupnya
    Ingredients (B)
  • 6             Candle nuts
  •                 Kemiri
  • 40    gr   Red chili
  •                Cabai merah
  • 10    gr   Eye bird Chili
  •                Cabe rawit
  • 40   gr    Shallots
  •                Bawang merah
  • 3     clv   Garlic
  •                Bawang putih
  • 2     cm   Galangal
  •                 Lengkuas
  • 2             Stalk Lemon grass
  •                 Batang serai
  • 2     cm   Ginger  
  •                Jahe
  • 2     tsp   White pepper
  •                Lada putih
  • 2    sdm  Andaliman (let me call this Bataknese pepper, since the shape do like pepper and pungeant)
  •                Andaliman 
  • 1            Chiken liver
  •               Hati ayam

        Method
    Cara Membuat:

  • Chargrilled the whole chicken, withaout burning it, we believe this will enhance the flavour of the chicken. Cut in portions
  • Bakar ayam diatas api sebentar (untuk menambah aroma ayam). Potong menjadi beberapa bagian
  •  Put (B) into a blender and grind well,set aside
  • Haluskan bumbu (B), sisihkan
  • Heat the oil and saute (B), till fragrant
  • Panaskan minyak, tumis bumbu (B) hingga harum
  • Add the chicken together with the other ingredientst, Mix well.
  • Masukkan ayam bersama dengan bahan lainnya, aduk rata
  • Cook on medium heat until the chikcen is tender The native chicken take longer cooking than normal one. Use pressure cooker if you wish other wise long slow cooking is better.
  • Masak dengan api sedang sampai ayam lunak. Karena ayam kampung lebih liat dibanding ayam biasanya, gunakan panci presto jika suka atau masak saja dengan waktu yang lama




Sate Kerang (Spicy cockles Sate)






Bahan (A)

2    kg  Kerang batu
Minyak untuk menumis
Garam dan gula secukupnya

Bahan (B)

40     gr      Bawang merah
  3     sdm   Bawang putih
15    gr       Cabe kering, rendam air panas
10    gr       Cabe rawit
11/2   sdm    Ketumbar
 2     cm      Jahe
10    lbr      Daun jeruk purut
 2     lbr      Daun salam
40    gr        Kelapa gongseng
 3    btg       Sereh


Cara memasak :



  • Cuci kerang sampai air kelihatan jernih. Rendam dalam air garam, supaya kerang mengeluarkan sisa sampah atau pasir dari dalam cangkangnya



  • Gonseng kelapa parut sampai kecoklatan



  • Giling kelapa gongseng sampai halus



  • Giling semua bumbu, dengan gilingan atau blender



  • Masak kerang dalam panci, biarkan selama 2 - 3 menit, ditutupi dengan api sedang tanpa air
  • Kupas kerang, sisihkan



  • Tumis bumbu (B), sampai harum dan masak. Masukkan kelapa gongseng, aduk rata



  • Masukkan kerang, aduk perlahan-lahan supaya kerang tidak hancur.
  • Siap disusun di tiusuk sate atau sebaikknya lidi.
  • Siap disajikan sebagai lauk atau makanan ringan.

Young Coconut Custard ( Klapper Tart Coklat)



This recipe is from my friend who originally from North Sulawesi. She always makes this pudding every time we have gathering in her house and we all love it. But I tweaked it a wee bit by adding drinking chocolate ( the powder ) since my family loves chocolate.... It is good served warm or chilled.

Ingredients

  400     gr          young coconut  (the flesh of 3young coconut, half and scrape the flesh which can be
                           replace with tin young coconut)
                          Kelapa muda ( daging dari 3 kelapa muda yang dibelah, jika tidak tersedia kelapa
                          muda segar dapat diganti dengan kelapa muda kalengan)
2000     ml         Coconut water ( from the same coconut or replace with full cream milk)
                          Air kelapa (dari kelapa yang sama, dapat diganti dengan susu full cream)
  250     ml         Full cream milk to dissolve the flour
                          Susu full cream untuk mencairkan tepung
      1     cup       Wheat flour
                          Tepung terigu
      1     cup       Maize flour
                         Tepung maizena
      3     whole   Eggs
                         Telur
 500      ml        Condensed milk
                         Susu kental manis
   50      gr         Butter
                         Butter
     1      tsp        Vanilla paste
                          Sari Vanila
  1/2      cup       White Rum ( I use Malibu )
                          Rum ( saya gunakan Malibu)
  1/2      cup       Drinking Chocolate Powder ( I use Cadburry)
                         Bubuk minuman coklat (saya pakai Cadburry, dapat diganti dengan Milo )
  1/2      cup       Kenari ( replace with walnut if it is not available), soaked in hot water then peel the
                          skin then sliced.

Method :




  • Bring to boil the coconut water, add the butter until melted
  • Didihkan air kelapa kemudian masukkan butter sampai mencair. 



  • Dissolve all the flour with full cream milk, add the whole egg. Mix well avoid any lump.
  • Cairkan tepung dengan susu full cream dan masukkan telur, aduk rata jangan sampai ada gumpalan



  • Pour in the mixture into the sauce pan, put the heat down.
  • Masukkan cairan tepung ke dalam panci, kecilkan api



  • Slow but constantly stir the mixture to avoid any lump.
  • Aduk terus secara perlahan supaya tidak menggumpal



  • Add in the condensed milk, keep stirring for a few minutes
  • Masukkan Susu kental manis, aduk terus sampai beberapa menit



  • Add the meat of the coconut, stir
  • Masukkan daging kelapa, aduk



  • Put in the Kenary or walnut, stir and then add the drinking chocolate. Keep stirring on low heat for another 10 minutes.
  • Masukkan kenari atau walnut, aduk kemudian masukkan bubuk minuman coklat. Aduk terus dengan api kecil selama 10 menit.
  • Place in individual mould, glass or  other container.
  • Masukkan ke dalam mangkok kecil, gelas atau tempat lainnya
  • Serve Chilled or warm.....
  • Dapat dihidangkan dingin atau hangat.....

Peyek ( Peanut Crakers )



This crackers is usually made for accompaniment of Pecal, but it is nice just to have it as a snack any time of the day. when I was little, I loved to eat this with just steam rice. My mother's is the best.

Ingredients (A)

250   gr   Peanuts, roasted, peeled and halved
    2         Whole eggs
300  ml   Coconut milk
250  ml   Water
  20         Kaffir lime leaves, thinly sliced
500  gr    Rice flour
Oil to fry
Salt to taste

Ingredients (B)

  50   gr      Garlic
    3   tbsp   Dried shrimp (optional)
  20   gr      Shallots
    2  tbsp    Coriander seeds


Method  :


  • Put (B) into a blender and grind until fine.
  • Mix well with ingredient (A), taste the salt.
  • Heat the oil on a wok
  • Take a ladle at a time of the mixture into a small bowl, add  two tbsp of peanut ( this is to avoid the peanuts getting soft) mix well.
  • When the oil is hot enough, take a table spoon of the above mixture and spread it along side the wok. Keep doing it until the wok is full. Fry until golden. Drip dry or put on  kitchen paper.
  • Repeat this until the mixture is finish.
  • Leave it to cool and store in an air tight jar.
