Home Made Tomato Sauce (Membuat Saus Tomat )





Jika anda mempunyai waktu dan senang memasak, biasanya kita senang membuat sesuatu sendiri (home made). Salah satunya adalah membuat saus tomat, tidak sulit..., fool proof hanya perlu waktu saja. Keuntungan membuat  saus tomat sendiri , selain harga lebih murah yang pasti lebih sehat, karena kalau anda baca bahan kandungan (ingredients) dari kebanyakan saus tomat siap beli, akan mengandung bahan pengawet dan pewarna. 

Resep saus tomat ini lebih sesuai untuk bahan alas pizza atau bisa dipakai untuk campuran pasta, atau tepatnya lebih tepat untuk masakan mediteranea, tapi boleh juga dicoba untuk tambahan di kuah bakso atau misop.

If you have spare time, making your own tomato sauce is very satisfying and rewarding. It is simple to make it and fool proof, what you need is time and patience. There aren't many tomato ketchup or sauce in the market are made without additive, so this recipe will help you to produce tomato sauce without unnecessary ingredients.

This sauce is suitable for a dip,  to mix with pasta and the base of pizza.






bahan - bahan yang dibutuhkan  -  the ingredients

1 kg fresh tomato, cut in half
1 kg tomat, belah dua

100 gr garlic, cut the bulb in half with the skin on
100 gr bawang putih belah dua dengan kulitnya

5 tbsp olive oil
5 sdm minyak zaitun

1 tbsp salt
1 sdm garam

1 tbsp sugar
1 sdm gula

1 tbsp mixed herbs
1 sdm mixed herbs

200 ml water or more
200 ml air atau lebih





cara membuat  -  methode

Masukkan belahan tomat dan bawang putih ke dalam loyang. Siramkan air, taburkan gula, garam, merica, mixed herb dan terakhir minyak zaitun. 
Put the tomatoes and garlic in a deep baking tray, add in the water. Sprinkle salt, sugar, black pepper, mixed herb and olive oil.

Masukkan ke dalam oven yang panas ( 200 C) selama 45 menit atau sampai lembut, tambahi air jika perlu
Put the tray in preheated oven, 200 C for 45 minutes or until soft, add more water if necessary

Keluarkan dari oven dan balikkan tomat dan bawang putih.  Tunggu dingin sebentar. Buang kulit tomat dan kulit bawang putih.
Remove the tray from the oven and turn the tomato and garlic upside down. Leave to cool. Remove the the tomato skin and garlic.

Masukkan tomat dan bawang putih kupas dengan sisa air dari loyang ke dalam blender, haluskan. Sekarang saus tomat sudah jadi, tapi jika menginginkan warna yang lebih merah dan rasa yang lebih dalam, masak dengan api kecil selama 15 menit atau lebih. Semakin lama dimasak semakin merah dan bertambah kental. Kekentalan terserah dengan keinginan anda. Untuk pizza dan pasta saya akan membuat agak encer, untuk dip saya buat agak kental
Put the flesh of tomato and garlic together with the juice from the tray into a blender until smooth or resemble a paste. At this point, the tomato sauce is actually ready, but to get a better (deeper) colour and more intense flavour, simmer the paste for another 15 minutes or more. The longer it simmers, the deeper the colour and gets thicker. The thickness of the paste is to your own preference. I will make the paste a little bit thicker if I want to use it as paste and thinner for pasta as well as pizza.

Swiss Bread ( Roti Sehat Tinggi Serat)





This is quite a dense and heavy bread, unlike most bread that you'll find in Indonesia. This recipe is adapted from Simone's our bread guru. This bread contain less wheat bran than hers, because I like it slightly lighter, still heavy though. The taste I think is just as good. If you are fond of bread and opt the healthy one, this is definitely the one.....

Jika anda ingin membuat roti sehat, resep teman saya Simone adalah pilihan yang tepat. Saya telah merubah sedikit resep Simone, karena menginginkan tekstur yang agak ringan, walau pun masih berat, yaitu dengan mengurangi jumlah wheat bran. 

Roti ini lebih baik untuk kesehatan karena mengandung banyak serat (wheat bran) dan biji-bijian jadi lebih bagus untuk pencernaan dibanding dengan roti putih. Roti ini gurih dan agak liat dibanding roti yang biasa kita jumpai di toko-toko roti yang agak manis dan ringan.










bahan yang dibutuhkan  -  you will need 

375 gr cakra kembar
375 gr bread flour

125 gr whole wheat bran
125 gr wheat brand

1 sdt garam
1 tsp  salt 

1 sdm gula
1 tbsp sugar 

11 gr ragi instant ( 1 sachet fermipan)
11 gr dry yeast ( 1 sachet fermipan ) 

400 ml air hangat
400 ml Luke warm water 

2 sdm minyak zaitun ( bisa diganti dengan minyak lain)
2 tbsp olive oil

1 sdm poppy seeds
1 tbsp black poppy seeds

1 sdm biji wijen
1 tbsp sesame seed

1 sdm biji bunga matahari
1 tbsp sun flower seeds






Cara membuat  -  methode

Mix the yeast, sugar and water and let it stand for 5 minutes or until slightly frothy
Campur ragi kering, gula dan air, aduk, biarkan selama 5 menit atau sampai sedikit berbusa


 Mix and knead all of the dough ingredients — by hand, mixer, or bread machine — to make a soft, smooth dough
Campur dan uleni semua bahan, dengan tangan, mixer atau bread machine (saya pakai kitchen aid, lebih praktis), sampai menjadi adonan yang lembut dan halus.

 Cover the dough, and let it rise for 1  hours, or until it's nearly doubled in bulk.
Tutupi adonan dengan kain lembab dan biarkan mengembang selama 1 jam atau sampai berukuran dua kali lipat dari adonan semula.

Gently deflate the dough and shape into a batton and put on a lightly greased  baking tray, cover, and let rise for about an hour, until noticeably puffy.

Kempeskan adonan  dan bentuk seperti batang,  kemudian letakkan di baking tray yang telah diminyaki.  Biarkan mengembang sekali lagi selama 1 jam atau sampai  benar-benar mengembang


 Bake the bread in a preheated 180°C oven for  30 - 40 minutes, or until golden. Remove them from the oven, 

Panggang roti di oven yang telah dipanasi sebelumnya  180°C selama  30 - 40 menit atau sampai berwarna kekuningan. Keluarkan dari oven 

 Cool the bread on cooling rack.
 Dinginkan diatas cooling rack

Pisang Goreng Medan (Medan style fried banana)



This is one of many popular snack in Indonesia. We have many different type of banana, some for eating and some for cooking. For this particular fried banana we use pisang kepok, it is easily substituted with plantain, that is more available, do not use the over ripe banana, because they tend to get soft when they are fried. 

There are many ways of preparing fried banana and this is my version that is very common in Medan. The use of lime stone paste water is to make the batter crispier for  longer.


Hampir semua orang menyukai pisang goreng baik tua maupun muda. Enak dimakan kapan saja bisa untuk sarapan, bisa untuk snack sore sambil minum teh. 

Jadi teringat masa kanak-kanak saya di Pematang Siantar. Dulu hanya ada satu kolam renang di kota kecil saya ini. Ada warung tak jauh dari pintu masuk kolam, terkenal dengan pecal gilingnya, tapi lebih terkenal lagi dengan pisang gorengnya yang dipotong-potong dan disiram bumbu pecal. Rasanya masih terbayang....yummm sedaaap. 

Tidak perlu rocket science untuk membuat pisang goreng. Hampir semua orang bisa menyiapkan dan dan mempunyai versinya sendiri-sendiri baik cara menggoreng maupun bahan yang digunakan. Berikut ini adalah versi saya.



bahan-bahan -  ingredients 


1 sisir pisang kepok
1 bunch banana

minyak untuk menggoreng
oil for deep frying



untuk campuran tepung - for the batter

1 sdm air kapur
1 tbsp lime stone paste water ( substitute with 1 tsp soda bicarbonate)

150 gr tepung beras
150 gr rice flour

1 sdm gula
1 tbsp sugar

200 ml air 
200 ml water

1 sdt vanilli
1 tsp vanilla ekstract

1 sdt garam atau secukupnya
1 tsp salt or to taste





persiapan - preparation

Untuk adonan tepung, campur semua bahan sampai gula dan garam larut dan adonan halus tidak ada gumpalan, kurangi atau tambahi jumlah air sampai didapatkan kekentalan yang diiinginkan. Sisihkan
For the batter, mix well all ingredients until salt and sugar completely dissolve and smooth (no lumps), reduce or add the amount of water until you get the consistency of double cream (or as you want it). Set aside.

Belah atau potong pisang, sehingga berbentuk seperti kipas.
Cut the banana into 4-5 slice, keep the end attached and spread like a fan

Panaskan minyak goreng
Heat the oil 

Masukkan pisang kedalam tepung dan goreng dengan api sedang, sampai berwarna kekuningan atau matang.
Dip the banana into the batter and fry over medium heat until golden or cooked

Ifumie Binjei ( Binjei Style Noodles Soup)


Kalau anda tinggal di Medan dan sekitarnya di tahun 80 an, anda pasti mengenal makanan ini "ifumie Binjei", dulu begitu populer. Hampir semua restoran menawarkan meni ini dan memang banyak penggemarnya, tapi sekarang ini sudah jarang kita jumpai. Ternyata makanan seperti fashion juga...datang dan pergi.

Saya menyukai segala jenis masakan mie (di Medan ini surganya mie). Rindu makan ifumie akhirnya minta resep dari teman saya, Titin, she makes the best Ifumie Binjei. Beberapa hari lalu saya mencoba resep ini untuk makan siang bersama teman-teman. Mereka semua menikmatinya.



Since this dish is name after and originated from  Binjai (Binjei) let me introduce this town. Here is the compilation from Wikipedia : Binjai formally Kota Binjai is an independent city in the North Sumatra province of Indonesia, and is surrounded by but not part of the Deli Serdang Regency. Binjai is connected to Medan (the provincial capital), about 22 km, by the Sumatra highway that goes to Banda Aceh, and effectively forms a part of Greater Medan. The "Kota" population was 181,904 in the 1990 Census, 224,516 in the 2000 Census, and 246,010 in 2010 Census.

The origin of Binjai when it established itself as a city is unknown. Historically the Binjai area was situated between two Malay kingdoms, Deli and Langkat. Binjai grew from a small village on the edge of the Bingai RiverAccording to both oral and written accounts of the history of the area, the city of Binjai grew from a small village located on the edge of the Bingai river, approximately where the Pekan Binjai village is located today. Traditional ceremonies were held to lay the foundations of the small village in the shade of a large Binjai Tree at the edge of the Binjai river, which flows into the Wampu River, which is navigable for a large portion of its length. Around the tree were built several houses, which were gradually enlarged, until finally a village hall was built. A lively port also developed, visited by barges from StabatTanjung Pura and Strait of Malacca. Over time, the Binjai tree gave its name to the growing city.  

Ok, enough of introduction..., saying Binjai, every one will refer to Rambutan, yes...the best rambutan is from Binjai, the other things that are just as famous : Binjai tofu, Binjai fried chicken and of course this dish "ifumie Binjei".

Ifumie Binjei was very popular in the 80's, most restaurant small or big will serve this dish... and we loved it. But somehow I don't find it anymore. So I asked the recipe from my friend Titin, who is famous for her special ifumie Binjai. Made the dish few days ago for lunch with friends and they enjoyed it very much.





bahan  -  ingredients

Untuk kuah - for the soup

5 tomatoes, remove the skin and put in a blender
5 buah tomat, buang kulit dan haluskan di dalam blender

1 kg whole chicken deboned, use the bone for the stock 
1 kg ayam utuh, lepaskan daging dari tulang, gunakan tulang untuk kaldu

the meat,  cut in strips
daging ayamnya, dipotong miring tipis

1 onion sliced
1 bawang bombay, belah dan rajang

50 gr  garlic, finely chopped
50 gr bawang putih (kira-kira 10 siung), dicincang halus

3 baby leeks, cut 2 cm 
3 daun pre, dipotong miring 2 cm

1 tsp blackpepper
1 sdt merica hitam

3 tbsp corn flour, dissolve in some water, for thickening
3 sdm tepung maizena, larutkan dengan sedikit air, gunanya untuk mengentalkan kuah

2 tbsp tomato puree (optional, this is to give a nice red colour for the soup)
2 sdm tomato pure ( gunanya untuk memberi warna merah kuah, tapi bisa juga tidak digunakan)

3 stalk of celery
3 batang seledri

1 tbsp sugar
1 sdm gula


salt to taste
garam secukupnya

3 L water
3 L air





Bahan lainnya - For the condiments


300 gr dry ifumie, deep fry until crispy
300 gr ifumie kering, goreng sampai renyah

4 large carrots (leave it whole), boiled in the stock
4 wortel besar utuh, ikut direbus dalam kaldu

100 gr mange tout, blanche 
100 gr ercis, rebus sebentar

button mushroom (tin or fresh), sliced and blanched
Jamur kaleng atau segar, dipotong tipis, rebus sebentar

oil to fry
minyak untuk menggoreng


sambal cabe hijau  -  the green chilli paste


50 gr birds eye chilli
cabe rawit hijau

salt, to taste
garam secukupnya

 300 ml water
 300 ml air untuk merebus

Boil the chilli on low heat, until soft.  Put in a blender until smooth. You may add some more water if you like it thinner.
Rebus cabe hijau dengan api kecil sampai lembut. Haluskan dalam blender. Silahkan menambah air kalau terlalu kental.


Cara memasak  -  preparation

Put all the soup ingredients in a stock pot, bring to a boil for  15 minutes 
Masukkan semua bahan untuk kuah ke dalam panci, didihkan selama 15 menit

Add in  the carrots whole  (uncut)  and the tomatoes in the pot and boil for another 15 minutes then simmer for at least 30 minute (the longer the better, the stock will be more mature), remove the carrots and then sliced, set aside
Masukkan wortel utuh (tidak dipotong) dan tomat yang telah diblender, didihkan lagi selama 15 menit kemudian kecilkan api lanjutkan memasak selama 30 menit (sebenarnya lebih lama lebih baik, karena rasa kaldu akan semakin enak), keluarkan wortelnya, potong miring dan sisihkan

Strain the stock,  and now you should  have a clean stock
Saring kaldu sehingga kita mendapatkan kaldu yang bersih.

mix well 1 tbsp corn flour with chicken strips, set aside 
Campurkan 1 sdm maizena dengan potongan ayam, sisihkan

saute the chopped garlic until fragrant, add in the chicken strips, stir well
tumis bawang putih sampai harum kemudian masukkan potongan ayam, aduk rata

add the slice onion and leeks, stir well  for a few menit then put in the clear stock.
masukkan potongan bawang bombay dan bawang pre, masak beberapa menit kemudian masukkan ke dalam kaldu.

Bring stock mixture to a boil for a few minutes, turn the heat down
Didihkan kembali kuah selama beberapa menit, kemudian kecilkan api
add the corn flour and stir well, now you should have a thicker soup, but if you think it is still too runny please add some more.
Masukkan larutan tepung maizena, aduk rata, sekarang kuah akan mengental, tapi jika masih encer, silahkan tambahi tepung maizenanya.




penyajian  -  how to serve


Break the fried noodles and take enough in your bowl, arrange the condiments carrot, mange tout and mushroom on top of the noodles. Add the soup while it is hot...., if you like it spicy you put the green chilli sauce.....
Ambil  ifumie goreng secukupnya, masukkan kedalam mangkok, tambahkan wortel, arcis dan jamur. Siramkan kuah selagi panas..., jika suka pedas, memang lebih pas ditambah saus cabe....
