Rujak Giling Medan (Medan Spicy Fruit Salad)





Akhir-akhir ini Medan panas sekali.....luar biasa...., enaknya memang makan rujak dengan buah yang segar dan bumbu yang sedikit pedas. Jadilah siang itu kami membeli rujak giling di Jalan Teuku Umar. Ada kesempatan untuk ambil foto dan sayapun meminta izin dulu dengan abang tukang rujak. 

Sambil mengambil foto, saya bertanya-tanya soal rujak Medan, ternyata menurut beliau, ini rujak Minang, terbukti hampir semua yang berjualan rujak giling di Medan adalah orang Minang, kecuali yang di jalan Pasundan...Orang Aceh...., tapi apapun namanya itu memang rujak ini enak sekali.

Bisa kita lihat step-by-step, bagaimana abang tukang rujak (beliau tidak keberatan) menghasilkan bumbu rujak yang berbeda dengan bumbu rujak lainnya. 


 Searah jarum jam, inilah urutannya :

Digilingan batu yang sangat besar, diameternya hampir 40 cm (menurut beliau dibawa dari tanah Minang), garam, terasi dan cabe rawit, kemudian digiling sampai halus.

Pisang batu (kelutuk) dipotong-potong kecil agar lebih mudah digiling sebanyak 4 buah, si Abang sedang mempersiapkan bumbu untuk dua bungkus.

Tambahkan kacang tanah goreng dan digiling kasar.



Setelah itu ditambahkan gula merah ( gula aren atau gula kelapa? lupa tanya), yang telah dimasak dan disaring, sebanyak dua sendok..., dan 2 sendok asam Jawa yang telah dilarutkan dalam air.

Campuran diaduk dengan ujung pelepah kelapa yang dibentuk sedemikian rupa, sehingga berfungsi sebagai sendok dan spatula.... ( kreatif ya...)

The Most Moist Christmas Cake





Christmas is over a few months ago, I eventually managed to finish this post. May be still imperfect but I need to publish it before next Christmas is coming. So here it is....

My mother in law is famous for her Christmas cake. Every one loves it and will have a slice to eat in or to take home. It is always very good , but this year is exceptionally good in fact it was excellent. She use a new recipe, using vodka instead of brandy for soaking fruit as well as feeding the cake. It was very moist and light. 

She made the cake a month before we arrived and feeding it with vodka periodically. She asked me to do the icing, which I was more than happy to do it. As I never make a good icing, this time I determined to learn more how to ice Christmas cake. I spent time on google and you tube ( as usual ). 

With her guidance I manage to make home made almond paste and royal icing. So here it is my first Christmas cake icing. It wasn't brilliant but good enough for a beginner, but anyway my son loves it as I took his suggestion to put vanilla pod for the snowman's hand.

Ingredients

300 gr raisins
300 gr sultanas
100 gr dried cranberry
150 gr dates
175 ml vodka
1 tbsp Vanilla extrack
175 gr butter, soften, plus extra to grease
175 gr light brown soft sugar
3 eggs, lightly beaten
125 gr plain flower
1/2 tbsp ground pepper (optional)
2 tsp mix spice


Method

preheat oven 150 C
use 8 inch deep round cake tin
Put fruit, vodka and vanilla in non metallic bowl (she use glass bowl), stir and cover with cling dilm, soak for up to 2 days
Beat butter and sugar until light and creamy, whisk in the beaten egg
Fold in the flour, pepper and mix spice, into the soaked fruit and mix well.
Put in the cake tin.
Bake for 1 hr 40 minutes depend on the type of your oven
Leave to cool completely in the tin.
Keep it in cool and dry, dark place for 3 months ( one month is good enough) , 2 weeks prior using prick the cakeand feed or drizzle with vodka 2-3 tablespoon, twice a week to keep the cake  moist and richer. 




Icing the cake


Home made marzipan

1 lb Marzipan
10 oz caster sugar
6 oz icing sugar (sifted)
1 large eggs ( or 2 small ones)
1 egg yolk
juiceof 1/2 lemon
1 tbsp brandy, rum or sherry
1/2 tsp vanilla essence
2 tbsp orange flower water or rose water








Shaping the marzipan



Make your own Royal icing

1 eggwhites
1 lb icing sugar sifted
1 tsp lemon juice
I just mixed all ingredient with a fork, add some icing sugar or lemon juice until I find the right consistency. 
Then I use my hand to shape the dough into a ball and cover with cling film. Roll and shape according to your design.





Bumbu rujak sirsak ( Spicy Palm Sugar and Soursop Fruit Salad Dressing)






Well, there aren't many Indonesian will refuse this spicy fruit salad. It is always popular anywhere, anytime. There are many ways to make the sauce, I have posted earlier to make the fresh sauce for this fruit salad and this time with my relative's recipe ( Thanks Arin ) I make the long lasting sauce that will keep in the fridge for a long time.  So you can use it anytime with fruits of your choice.
What makes this recipe rather special is "sour sop" as main ingredients (of course the brown sugar). The flavour and aroma of is very prominent and gives the thick texture to the sauce. Since it has sour taste (like the name suggested) we do not need to much tamarind to balance the sweetness of the palm sugar.

Siapakah yang tak menyukai rujak? hampir semua orang Indonesia menyukainya. Selalu disukai dimana saja dan kapan saja. Ada banyak macam-macam bumbu rujak, salah satunya "bumbu rujak Medan" yaitu bumbu rujak segar, sudah saya upload beberapa waktu lalu. Kali ini saya membuat bumbu yang tahan lama (simpan dikulkas) yang resepnya dari saudara (Terima kasih Arin). 

Bumbu dapat digunakan kapan saja jika ada buah tersedia di rumah. Jadi kalau mau berbagi dengan teman-teman yang sedang berkunjung ke rumah gak perlu sibuk-sibuk membuatnya. 

Yang membuat bumbu rujak ini agak special adalah buah sirsak sebagai salah satu bahan pokoknya. Rasa sirsaknya dominan dan harum dan tekstur kekentalannya bagus dan karena rasanya asam, tidak perlu ditambahkan banyak asam jawa lagi….cicipi dahulu….



bahan-bahan  /  ingredients

500 gr gula merah, potong-potong kecil
500 gr palm sugar, cut in small pieces

4 sdt Asam Jawa, atau sesuai rasa, lumatkan dengan beberapa sendok makan
4 tsp tamarind paste, or to taste

1/2 cangkir air
1/2 cup water

300 gr sirsak, yang telah dibersihkan dan dibuang bijinya (kira-kira 1 buah siersak), diblender

300 gr soursop pulp ( 1 whole medium size soursop), whizz it in the blender

bumbu yang dihaluskan  /  the paste

2 sdt terasi
2 tsp shrimp paste

2 sdt garam
1 tsp salt

25 biji Cabe rawit, atau sesuai rasa 
25 birds eye chilli, or to taste

2 biji Cabe merah
2 red chilli




cara membuat  /  method


Masak gula dengan air sampai semua gula larut, matikan api saring
Put sugar and water in a sauce pan, put over medium heat until all the sugar dissolve, turn off the heat and strain.

Campurkan saringan gula dengan bumbu yang telah dihaluskan, masak kembali dengan api kecil selama 20 menit, jaga agar tidak sampai mendidih
Put back the sugar and mix in the paste in clean sauce pan, simmer for at least 20 minutes

Masukkan sirsak yang telah diblender, aduk sebentar dan matikan api
Put in the soursop, mix well and turn off the heat.

Sisihkan bumbu sampai dingin, pindahkan ke dalam botol atau wadah bersih. Simpan dalam kulkas dapat digunakan kapan saja anda butuhkan.
Let the sauce to cool down, put in sterilised container and keep in the fridge. Use anytime you need it.





Garden Harvest 3 ( basil, mint and oregano)

Really these are not tropical plants nor common herbs that we use for Indonesian cooking. But it is a challenge to grow them, so I did have a go and they thrive. 

I use them in my cooking regularly and share some with my friends. 

I do plant thyme, but it is terribly unhappy....., may be Medan is just to humid for it.

Foto-foto ini adalah hasil kebun di belakang rumah, walaupun bukan tanaman tropis dan tidak umum digunakan untuk bumbu masak Indonesia...., tapi saya senang mencoba menanamnya..... dan ternyata mereka tumbuh subur.

Sering juga saya gunakan untuk memasak dan sebagian dibagikan ke teman-teman. 

Ayoooo, siapa yang hobby berkebun ini bisa dicoba....

Oh iya, ada satu lagi yang belum saya ambil fotonya...Thyme, yang satu ini hidup segan mati tak mau mungkin karena iklim di Medan terlalu lembab...., tapi kita tunggu saja.
