Kue Sus Isi Vla atau Ragout Ayam ( Sweet or Savoury Profiteroles)




Profiteroles casing is actually very versatile,  you can decide what ever filling you want to put either sweet or savoury, it is depend on when you want to serve them. If you want to serve as a nibble or snack you can opt the savoury filling and if you wish to have as pudding, vanilla custard will be great for it and serve with ice cream and or chocolate sauce.

Here are options you might like to try for the filling, specially the savoury one, it will surprised your guess and friends.

Kue Sus dapat diisi dengan isi rasa manis ataupun asin. Kue sus isi vla sudah sering kita jumpai, tapi boleh juga dicoba diisi dengan ragout ayam, untuk kejutan ketika dihidangkan, rasanya enak sekali dan berbeda. Saya sarankan buatlah kue sus berukuran mini supaya mudah dimakan.




Bahan - Bahan  /  Ingredients

100 gr margarine
100 gr margarine

125 gr Tepung chakra kembar
125 gr high protein flour

250 ml air
250 ml water

1 sdt Garam
1 tsp salt

 1 sdt Gula 
1 tsp sugar

4 kuning telur
4 egg yolks

2 putih telur
2 egg white


Cara membuat / Methode

Panaskan oven sampai 180 C
Preheat the oven to 180 C
Rebus air, margarine, gula dan garam sampai margarine mencair dan mendidih, kecilkan api
Bring to a boil, water, margarine, sugar and salt. Turn the heat down

Masukkan tepung hingga rata dan kalis, tidak lengket.
Add in the flour, mix well until smooth

Diamkan hingga agak dingin
Leave to cool for 10 - 15 minutes

Masukkan telur, satu per satu aduk hingga rata
Put the eggs, one at a time and mix well until  smooth
Grease the baking tray, 

Olesi cetakan dengan minyak, cetak dan panggang  selama 30 menit atau sampai berwarna coklat muda
Grease the pan, and put the mixture on it the size you prefer for 30 minutes or until golden brown.


Pilihan isi / The Filling  


Vla / Custard
Bahan / Ingredients

75 gr gula pasir
75 gr sugar

50 gr susu bubuk
50 gr milk powder

30 gr maizena
30 gr maizena

30 gr Tepung terigu
30 gr multipurpose flower

2 sdm susu kental manis
2 tbsp condensed milk

1/2 sdt vanili bubuk
1tsp Vanila extract 

300 ml air
300 ml water

2 kuning telur
2 egg yolk

1 Sdm margarine / butter
1 tbsp margarine / butter

Garam  secukupnya
A pinch of salt


Cara / Preparation

Campurkan semua bahan, kecuali margarine, setelah tercampur rata Masak dengan api sedang, kemudian masukkan margarine
Mix well all ingredients, except the butter, cook on medium heat and constantly stir until half done and add in the butter.

Aduk hingga kental. Setelah masak, dinginkan sebelum diisikan
Keep stirring until reaching the perfect consistency. Leave to cool before filling the profiteroles.


Ragout Ayam
Chicken Ragout

Bahan  /  Ingredients

200 gr dada ayam tanpa tulang, masak dan potong dadu kecil
200 gr boneless chicken breast, boiled and finely diced 

60 gr margarine atau butter
60 gr margarine or butter

30 gr tepung terigu
30 gr multy purpose flour

5 bawang merah cincang halus
5 shallots, finely chopped

1 siung bawang putih cincang halus
1 clove garlic, finely chopped

1 buah wortel, masak dan potong dadu kecil
1 carrot, boiled and finely diced

500 ml kaldu ayam
500 ml chicken stock

gula, garam dan merica secukupnya
sugar, salt and pepper to taste



Cara / Preparation

Tumis bawang merah dan bawang putih dengan margarin sampai harum kemudian masukkan tepung
Melt the margarine and sauté the shallots and garlic till fragrant, add in the flour.

 Aduk sampai rata dan masak dengan api kecil - sedang
Stir well and cook on low - medium heat.

Masukkan kaldu ayam sedikit demi sedikit dan terus aduk, agar tidak menggumpal. 
Add in the stock a little bit at a time while keep stirring, this is to avoid lumps

Masukkan ayam, wortel, garam, gula dan merica.
Put the chicken, carrot and seasoning.

Aduk terus sampai masak dan mencapai kekentalan yang diinginkan.
Keep stirring until you get the custard consistency. Leave aside to cool before filling the profiteroles.
