Kepiting Soka ( Soft Shell Crab with Salad )



If you like crab and do not want to have a hassle of shelling it, soft shell crab is the best substitute for it, even though it does not have the same taste and texture it is a different experience. It is increasingly popular in many restaurant specially Japanese restaurant. You can serve it in shushi or serve it with salad as a starter or even a side dish.

Kepting soka mulai populer beberapa waktu yang lalu dan bermunculan di menu restaurant. Sekarang kepiting soka mentah bisa dibeli di Supermaket dalam keadaan beku. Saya belum pernah lihat di pasar. Memang tidak banyak dimasak dan disajikan di rumah sebagai hidangan sehari-hari. Tapi jika ingin mencoba boleh dicoba resep mudah saya ini.



Bahan-bahan yang diperlukan / you will need
Untuk Kepiting Soka Goreng / For the soft shell crab

5 Kepiting soka (atau sesuai keperluan), bersihkan insang dan cuci
5 soft shell crab ( or as many as you need to serve), remove the gill and wash gently

1 telur
1 whole egg

100 gr tepung terigu
100 gr multy purpose flour

garam halus secukupnya
fine sea salt, to taste

1 sdt Merica bubuk
1 tsp black pepper powder

Minyak goreng
Cooking oil for frying


Cara memasak / preparations

Campur tepung, garam dan merica sampai merata
Mix well the flour, salt and pepper

Kocok telur dan beri sedikit garam
Beat the egg with a fork and add a pinch of salt.

Celup kepiting soka kedalam telur kocok kemudian masukkan ke dalam tepung, balut sampai rata
Dip the crab in egg and roll it into the flour.

Jika menyukai tepung yang agak tebal, ulangi proses ini 2 kali.
If you prefer a thicker batter (coating), repeat the proses twice

Panaskan minyak
Preheat the cooking oil

Buang kelebihan tepung yang menempel pada kepiting agar minyak tidak terlalu kotor (bisa digunakan saringan)
Remove the excess flour by putting it on a strainer or simply shake it off

Goreng dengan minyak sedang - panas, angkat setelah berwarna kecoklatan
Fry on medium - high heat until golden and ready

Sajikan selagi panas dengan salad
Serve while it is hot with salad as a side dish or even starter



Untuk Salad / For the salad

Wortel, potong korek api panjang
Carrot, cut in long and thin strip

Daun Salad, rajang kasar
Salad leaf, roughly sliced

Jamur kuping, masak dan rajang kasar
Black / ear mushroom, clean and cook, roughly sliced

Untuk Dressing / For the dressing

1 Cabe merah, rajang halus
1 Red chilli, finely sliced

3 Cabe rawit, rajang halus
3 Bird's eye chilli, finely sliced

3 Lembar daun jeruk purut, rajang halus
3 Kaffir lime leaves, finely sliced

1 Siung besar bawang putih, cincang halus
1 Large clove garlic, finely chopped

1 sdt kecap ikan 
1 tsp fish sauce

Jeruk nipis, secukupnya
Lime or lemon juice to taste

1 sdt gula atau secukupnya
1 tsp sugar or to taste

3 sdm air masak
3 tbsp water

Garam secukupnya
Salt to taste

Campur rata semua bahan
Mix well all ingredients
