Tauco Udang Medan ( Prawn stir fry with fermented soybean)



Tauco (ChinesepinyindòujiàngPe̍h-ōe-jī: tāu-chiùⁿ), is a paste made from preserved fermented yellow soybeans in Chinese Indonesian cuisine. The name comes from the pronunciation in the Hokkiendialect and it is originated from China. The sauce is also commonly used in other Indonesian cuisinestraditions, such as Sundanese cuisine and Javanese cuisine.
The sauce is often used as condiment and flavouring for stir fried dishes such as tahu tauco (tofu in tauco sauce), kakap tahu tausi (red snapper with tofu in soybean sauce), or in soup such as swikee oh (frog legs in tauco soup) and pie oh (softshell turtle in tauco soup). Today the major production center of tauco in Indonesia is in CianjurWest Java. Source: ( wikipedia )

This is another way of cooking prawns Medan way, it is quick and easy...., yet delicious.


Bahan / main ingredients

500 gr udang kupas, tinggalkan bagian ekor
 peeled prawns, leave the tail intact

100 gr rimbang (cepokak)
 pea aubergine

bumbu yang dirajang / sliced ingredients

5  biji    Cabe merah
 red  chilli

5  biji    Cabe hijau
 green chilli

5  biji    Cabe rawit (jika suka pedas)
 green chilli

10  buah  Bawang merah
 shallots

3  siung Bawang putih
    cloves garlic

2  cm     Jahe
 ginger

bumbu lain / other ingredients

2  cm     Lengkuas, memarkan
galangan, bruised

2  lbr     Daun salam
salam leaves

1  tki     Serai, memarkan
1 stalk lemon grass, bruised

1  sdm    Gula merah
tbsp, palm sugar

2  sdm   Tauco, cuci dan tiriskan
2 tbsp fermented yellow soybean,  drained

1  bh     Tomat, potong dadu
1 tomato, diced

3  sdm   Minyak untuk menumis
3 tbsp oil for sautéing 

1/2  cangkir Air
1/2 cup water

Garam secukupnya
salt to taste






Cara Memasak :

  • Kupas udang dan tinggalkan bagian ekor. Bersihkan udang, belah punggung, sisihkan 
  • clean the peeled prawns

  • Tumis bumbu yang dirajang, sampai harum, masukkan bumbu lainnya kecuali tomat, aduk-aduk selama beberapa menit
  • Saute the sliced ingredient till fragrant and add the rest of ingredient except tomato, stir occasionally for a few minutes

  • Masukkan rimbang tumis sampai rimbang 1/2 masak.
  • add in the pea aubergine, continue cooking until 1/2 done

  • Masukkan udang  kemudian air dan tomat.  Masak sampai udang matang, jangan terlalu masak supaya tidak keras. Rasakan garam dan gulanya
  • Put all the prawn in, then the water and tomato. Take care not to overcook the prawns. Taste the salt and sugar

  • Siap dihidangkan
  • ready to serve
