Siapa yang tak kenal lemper? Makanan ini sering dijumpai pada banyak acara kumpulan sebagai makanan ringan. Kebanyakan daerah di Indonesia mempunyai versi lempernya masing-masing. Lemper dibungkus daun kemudian dipanggang menjadi ciri khas lemper Medan. Lemper dibalut pandan didalam dan pemanggangan bertujuan untuk menambah keharuman ketan.
This food is popular all over Indonesia. Found almost on every function as a light snack. Every region region in Indonesiahas their own version of lemper. Medan version is special because it is made almost bite size ( well..., two) and roasted on a pan to improve the fragrance.
Bahan / Ingredients
500 gr beras ketan
Gelatinous rice
200 ml santan kental
Thick coconut milk
200 ml santan encer
Thin coconut milk or water
1 tki sereh
Stalk if lemon grass
10 lembar daun jeruk purut
Kaffir lime leaves
Garam secukupnya
Salt to taste
Untuk isi / For the filling
250 gr Dada ayam
Chicken breast
1 L air
Water
Bumbu yang dihaluskan / the paste
1 Sdm ketumbar
Tbsp coriander seeds
3 siung bawang putih
Cloves garlic
3 btr kemiri
Candle nut
1 sdt Merica
Tsp white pepper corn
1/2 sdt jintan
Tsp cumin
1 Sdm gula pasir
Tbsp sugar
1 sdt Garam
Tsp salt
Bahan lainnya / Other ingredient
Daun pisang
Banana leaves, aluminum foil is a good substitute if banana leaves isn't available, only we can not have the same fragrance
Daun pandan
Pandan leaves, omit if you can not find one
Cara / Preparation
Rendam beras ketan semalam, tiriskan dan kukus selama 15 menit
Soak the gelatinous rice over night, drain and steam for 15 minutes
Sementara itu Masak santan dengan sereh, daun jeruk purut Dan garam
dengan api kecil sampai harum dan air berkurang. Sisihkan
Meanwhile, simmer the coconut milk together with lemon grass, salt and kaffir lime leaves until reduce to a half and fragrant
Angkat beras ketan masukkan dalam panci santan, aduk sampai rata.
Put the rice into the coconut milk mixture, mix well
Kukus kembali selama 15 menit.
Steam the rice again for further 15 minutes
Untuk isi / for the filling
Tumis bumbu yg dihaluskan, sampai harum dan masak, masukkan air Dan dada ayam
Sauté the paste until fragrant, add the water and the chicken breast until the liquid reduced.
Angkat ayam, disuir-suir halus, kemudian campur kembali dengan sisa bumbu
Drain the chicken and finely shred, mix with the left over liquid, set aside
Siapkan daun pisang muda Dan pandan
Prepare the young banana leaves and pandan leaves
Ambil 2 Sdm ketan Dan pipihkan membentuk segi empat kira- kira 5x7 cm,
isi dengan 2 sdt ayam suir, kemudian gulung.
Take about 2 tbsp of rice on the banana leave, flatten the rice to make a rectangular shape about 5x7 cm. Put 2 tsp of filling in the middle then roll it from the longer side.
Lapisi gulungan dengan daun pandan sebelum di bungkus daun pisang.

Panggang lemperdiatas wajan yg telah diberi sedikit minyak, sampai daun berubah warna.
Put a few drops of oil on a pan before roasting the lemper, turn around occasionally, until fragrant and the leave slightly charred.
Angkat, dapat dihidangkan
Serve warm or room temperature.
