Kepiting Panggang (Stuffed Dressed Crab)




Kepiting Panggang ( Grilled Stuffed Crab)

This dish is delicious and will impress your guess in any dinner party. This recipe using fresh crab does need some work, but it is all worth while, but if you are using dressed crab, everything will be simpler. Serve as a starter or even a light lunch with salad green.

Resep ini adalah variasi memasak kepiting jika ingin mencoba cara berbeda dari yang biasa kita masak dan makan. Sedikit agak ribet tapi bisa pakai daging kepiting yang sudah siap ( rasanya tetap enak yang segar). Kebanyakan teman dan tamu saya menyukai sajian ini. Selain presentasi yang bagus rasanya pun enak. Sesuai untuk hidangan pembuka atau sebagai makanan ringan yang dihidangkan salad...

1 kg Fresh Mud Crab ( 3  ) or 200 gr Crab meat
      kepiting segar (3 ekor) atau 200 gr daging kepiting
40 gr kentang, par boil, diced 5mm x 5mm
      Kentang setengah masak, potong dadu 5mm x 5mm
40 gr carrot, par boil, diced 5mm x 5mm
      Wortel, setengah masak, potong dadu 5mm x 5 mm
2 cloves garlic, chopped
      siung bawang putih, cincang
40 gr onion, chopped
      bawang bombay (1/2 bawang ), cincang
40 gr spring onion, thinly sliced
      daun bawang, rajang halus
1/2 tsp pepper
      sdt merica
1/2 tomato, discard the seeds, diced same size to carrot
      buah tomat, buang isi, potong dadu sama ukuran dengan wortel
100 gr cheddar, grated. 50 gr for mixture, 50 gr for sprinkle
      keju cheddar, diparut. 50 gr untuk campuran, 50 gr untuk taburan
3 tbsp mayonnaise
      sdm mayonnais
1 lime or lemon juice
     air dari 1 jeruk nipis
4 tbsp olive oil
     sdm minyak untuk menumis

Cara memasak / Direction     

Boil the crab until ready or for 20 minutes, strained, leave to cool
 Rebus kepiting sampai masak atau selama 20 menit, tiriskan, biarkan dingin sebentar
 
Remove the flesh from shell, set aside (or just buy frozen or even canned crab meat), save the shell and cleaned
Keluarkan daging kepiting dari cangkang, sisihkan ( atau dapat dibeli daging kepiting beku atau kalengan), sisihkan cangkang dan bersihkan

Sautee onion and garlic until fragrant add potato and carrot stir until well done
Tumis bawang bombay dan bawang putih sampai harum, masukkan kentang dan wortel aduk sampai masak

Put spring onion and crab meat gently, until warm through, 
Masukkan daun bawang, daging kepiting, aduk perlahan sampai hangat

Add grated cheddar, tomato, mayonnaise,  lemon juice , salt and pepper, mix well but gently
Sekarang tambahkan keju, tomat, mayones, air jeruk , garam dan merica, aduk rata tetapi perlahan

Put the mixture in the shell for better presentation or just put into ramekin dish or any interesting container , provided it is oven proof.
Masukkan campurang ke dalam cangkang kepiting agar tampak indah, atau bisa di wadah apa saja asal dapat dimasukkan ke dalam oven

Sprinkle with the remaining cheddar cheese
Tabur sisa keju di atasnya

Put under the grill for 10 minutes or until the cheese is melting and golden
Letakkan dalam open, gunakan api atas, panggang selama 10 menit atau sampai keju meleleh dan berwarna keemasan

Serve warm with salad
Sajikan selagi hangat dengan salad.
