Golden Syrup




The  idea of making home made golden syrup is that I'm going to post a series of sweet recipe that is using this particular ingredient. In Medan this is not readily available if there is, it would be costly.This homemade version is a good substitute, even though not as flavour some as one in the market.

It is not as difficult as I thought it would and It is not labour intensive even though it requires 30 minutes or less cooking.

If after cooling the syrup turns very hard do not panic, reheat and add some water, stir well and cool down and vice versa when it is too runny reheat for a few minutes until slightly thicken. When the liquid is hot, it always runny If you want to be more precise you can use candy thermometer.

This recipe will produce light color ( golden ) syrup if you prefer darker one what you need to do is to make caramel with some of the ingredients, once the caramel is done, add the rest of the ingredients, stir well and leave to slow boil until we get to consistency we want to achieve. 

Ide membuat golden syrup ini muncul, karena saya akan mem-post beberapa kue yang menggunakan bahan ini.  Golden syrup tidak mudah di dapat di Medan, kalau pun akan mahal harganya, lagi pula membuatnya tidak sesulit yang saya bayangkan. Mungkin rasa tidak seperti yang ada dipasaran, tetapi syrup buatan sendiri ini, sudah cukup bagus.

Kue kering mau pun cake yang akan saya post dapat digunakan untuk sajian Natal maupun Hari Raya. Bukan kue kering yang umum disajikan tapi ini akan menjadi variasi baru, lagi pula mudah membuatnya. 


Ingredients / bahan

400 gr sugar
             Gula
400 gr water 
             Air
A pinc of salt
             Sedikit Garam
1/2 tsp citric acid or replace with 1 lemon, will give more flavour
             Sdt citrun zuur atau 1 lemon dan peras jusnya, akan lebih harum
1/4 tsp bicarbonate soda
              Sdt bicarbonate 
Add 2 tbsp hot water
               2 Sdm air panas

Method / persiapan

 Pour sugar and water into a large saucepan, bring to boil over low - medium heat and adding the citric acid while boiling.
Masukkan gula dan air kedalam panci, rebus dengan api kecil sampai mendidih, masukkan citrun zuur.

Stir occasionally  ( if necessary), or just leave it alone for 20 minutes, it will still look watery (it will thicken as it cooling down) add the soda bicarbonate that has been diluted in hot water. Don't worry if it start producing small bubbles. They will disappear.
Aduk sekali-sekali ( jika perlu), atau biarkan saja, masak selama 20 menit. Kelihatannya masih encer ( akan mengental jika sudah dingin), sekarang masukkan soda bicarbonate yang sudah dilarutkan dalam air panas. Jangan takut karena banyak gelembung, setelah dingin semua gelembung akan hilang.

Cool and pour into sterilised jars or bottles. Label and store in a cool place.
Dinginkan Dan masukkan ke dalam tempat yang telah disterilasi. Beri label dan simpan di tempat dingin ( saya masukkan kulkas)

If you use lemon, do not throw away the discarded lemon slice. It taste just like candied lemons.
Jika menggunakan lemon, jangan buang lemonnya, setelah dingin, bisa dimakan seperti manisan lemon.
