Tumis Pepaya Muda ( Young Papaya with Prawns )
Every one knows, pepaya is sweet, juicy fruit and full of goodness. In Indonesia we eat the male flower, the young leaves as well as the unripe fruit. We use the unripe fruit for pickles, sweet or sour ( my favourite childhood food, but there aren't many children that know this traditional food now) and also use it as a vegetable to go with rice.
I'm going to show 2 different way of cooking this unripe pepaya one is stir fry with prawns and the other one in curried with black eye bean, the latest is very old fashion (my mother's favourite). Certainly there are many more ways of doing it.
Jaman sekarang ini tidak banyak lagi orang memasak buah pepaya muda sebagai sayur. Masih banyak digunakan untuk salah satu buah campuran rujak (ya...lebih matang sedikit dari yang untuk sayur) atau untuk asinan.
Hari ini saya akan menyajikan 2 cara memasak buah pepaya muda (kebetulan ada di kebun belakang) dan tentunya masih banyak cara lain untuk mengolahnya, yang satu ditumis dengan udang segar dan lodeh pepaya muda dengan kacang putih.
Young Papaya with Prawn Stir fry
500 gr of young papaya, match stick cut or use julienne cutter
Pepaya muda, dipotong korek api
250 gr prawn, shelled and deveined
Udang, kupas dan belah tengah
8 shallots, finely sliced
Bawang merah, rajang tipis
2 clove garlic, finely sliced
Bawang putih, rajang tipis
5 red chili, sliced
Cabe merah, potong miring
5 green chili, sliced
Cabe hijau, potong miring
5 birds eye chili, slice
Cabe rawit, potong miring
2 slices of galangal
2 potong tipis lengkuas
1 tsp sugar
1 sdt gula
3 tbs oil
3 sdm minyak goreng untuk menumis
150 ml water
air
Salt to taste
Garam secukupnya
How to prepare
Stir fry the shallots, garlic, galangal and all the chilies till fragrant.
Tumis bawang merah, bawang putih, lengkuas dan semua cabe sampai harum
Put in the papaya, stir well, add in the water, leave it to boil.
Masukkan pepaya, aduk rata, masukkan air, masak sampai mendidih
By now the papaya should be translucent and nearly cooked, add the prawns, sugar and salt.
Sekarang pepaya menjadi hampir masak, masukkan udang, gula dan garam, aduk lagi sampai matang
Ready to serve with hot steam rice.
