Gulai is a term for a coconut milk base soup with different spices. Fern tips gulai is very popular in Medan and normally served with lontong (rie cake). Special dish in Hari Raya ( Iedul Adha)
Ingredients :
3 bunches Fern Tips
5 pcs Red Chilies
10 pcs Eye bird chilies
6 cloves Shallots
1 clove Garlic
2 cm Ginger
2 cm Galangal (bruised)
2 pcs Daun salam (Indonesian Bay leaf)
1 talk Lemon Grass (dimemarkan)
2 pcs Candle nut
1 tbs Dried Shrimp (grind)
50 ml Thick coconut
500 cc Water
Salt to taste
Method :
- Clean the fern tips, cut about 5 cm and then boil for 5 minutes
- Drain and put aside
- Drain and put aside
- Red and eyebird chilie, shallots, garlic, ginger and candle nuts put in a blender until resemble paste.
- Sautee the paste till fragrant then add on the ground dried shrimp.
- Put in water and leave it to boil for 3 minutes.
- Add on the coconut, and stir slowly for 2 min.
- Put in water and leave it to boil for 3 minutes.
- Add on the coconut, and stir slowly for 2 min.
- Put the boiled fern tips in the soup, leave it to slow boil for another 3 minutes.
- Ready to serve
