Sedangkan membuat mie menjadi keriting seperti mie Siantar, ada sedikit teknik (cara) yang berbeda. Setelah melalui beberapa percobaan (duh mau buat mie saja kok ribet ya...., tapi tak apa demi mendapatkan mie sehat tanpa pewarna dan preservative) akhirnya berhasil juga.
Kalau membaca "cara membuat" terlalu sulit ikuti saja step-by step gambarnya, mudah-mudahan membantu.
Curly noodles is identical with Siantar noodles. The recipe of this curly green noodles is similar to the one I posted before, only the colour and the shape is different. While the taste is similar with firmer consistency (if you leave it to rest long enough, preferably 1 day in the fridge)
The green colour is from liquidized or juice of vegetable, you can use spinach, I use macha instead since it is simpler way to make natural green colour. There is a method (trick) to make the noodles curly. It sounds complicated but really it isn't. If you find reading the instruction is confusing, try to see the step-by-step pictures, hopefully it will help.

Bahan - Bahan / Ingredients
500 gr tepung protein tinggi (Cakra kembar)
500 gr high protein flour
2 telur + 2 sdm minyak + Air es = 250 ml
2 eggs + 2 tbsp vegetable oil + ice cold water = 250 ml
1 sdt garam
1 tsp salt
2 sdt macha (jika memakai juice sayur, gunakan 100 ml dan campuran telur,minyak dan air es menjadi 150 ml, jadi jumlah cairan tetap 250 ml)
2 tbsp macha (If you use vegetable juice, use 100 ml while the eggs, oil and cold water is 150 ml, this will make the amount of liquid 250 ml)
Tepung kanji untuk taburan
Tapioca / corn starch to sprinkle

Campur telur dan minyak goreng kocok dengan garpu sampai tercampur
Mix well the eggs and oil with a fork
Larutkan garam dalam air kemudian masukkan ke dalam telur
Dissolve the salt in water then add into the egg mixture, mix well
Buat lubang ditengah tepung, masukkan campuran telur, campur kemudian uleni sampai kalis.
Make a crater in the middle flour, pour in the egg mixture, mix the the flour inside out until and start kneading until smooth and pliable.
Bentuk adonan menjadi bola, istirahatkan dan tutupi selama 1 hari atau lebih didalam kulkas
Shape the dough into a ball, put in a container or plastic bag and leave to rest in the fridge a day or more.
Keluarkan dari kulkas, biarkan kembali ke suhu ruang

Potong sebagian bola, ratakan sedikit sebelum digiling dengan pasta maker.
Cut a small portion of the dough and flattened before rolling in pasta maker.
Giling berulang-ulang mulai dengan yang paling tebal kemudian ke yang lebih tipis dengan ketebalan yang diinginkan. Untuk ukuran mie ini saya pakai gilingan no 2
Roll the dough until smooth, start from the thickest roll to the thinner one. For this type of noodles I use no 2
Taburi lembaran pasta dengan kanji sebelum dipotong dan taburi lagi hasil potongannya agar tidak lengket. Sambil menggiling potongan lainnya sebaiknya lembaran pasta ini diangin-anginkan (15 - 20 menit) supaya agak mengeras sehingga bentuk keritingnya semakin jelas..
Sprinkle the pasta sheets with tapioca flour or corn starch before and after cutting, to stop it from sticking. Leave to dry 15 - 20 minutes, this is to help making the curl even obvious.
Cara membuat keriting: tekan dengan tangan sewaktu lembaran mie dipotong dan keluar dari gilingan maka hasilnya akan keriting, taburi lagi dengan sedikit kanji

Didihkan air tambahkan sedikit minyak dan garam.
Bring water to a boil in a pot, add some oil and salt
Masukkan mie, hanya beberapa detik langsung angkat, tiriskan dan tambahkan sedikit minyak lagi aduk rata, supaya tidak lengket.
Put the noodles in the boiling water just a few seconds, take it out immediately and mix in a little oil to stop it from sticking.
Sekarang mie sudah siap digunakan, untuk dijadikan mie goreng atau mie kuah (mie pansit), atau bisa disimpan di kulkas siap untuk digunakan jika perlu (max 2 hari di kulkas)
