Roti Ketawa ( Laughing Cookies )

I always want to make this cookies..., my childhood snack. I spent 6 years in Pematang Siantar, where most children will have it for snack. It has a split in the middle and it looks likes someone is laughing hence we call it " roti ketawa ", literally means laughing cookies. I remember vividly it was the size of my fist and quite hard to bite, so this time I make it much smaller and softer than the original. It is tastier and easier to eat.

Ingredients :

350    gr         Flour
    1    tbsp     Baking powder
  25    gr        Butter, melted
  10    tbsp     Syrup
    2    whole  Eggs, lightly beaten
  50    gr        Sesame
60    gr        Peanut, roasted and ground
Oil for deep frying

Method :

  • Sift the flour together with baking powder in a bowl
  • Make a well in the middle of the bowl, add the butter.
  • Using a fork, stir out ward, add the syrup and egg, keep stirring.
  • Add the peanut and 2 tbsp of the sesame, now knead the dough with your hand until form a ball and not sticky.
  • Leave it to rest for 30 minutes, cover with a cloth.

Make a ball the size of a nutmeg

Put it on sesame bed and lightly press it while you are rolling it.
This way the sesame will stick on the dough balls.

Deep fry in a very low heat, stir occasionally until golden.
Put on kitchen paper to reduce excess oil.
Serve Roti ketawa to accompany your tea.....
