This recipe is from my friend who originally from North Sulawesi. She always makes this pudding every time we have gathering in her house and we all love it. But I tweaked it a wee bit by adding drinking chocolate ( the powder ) since my family loves chocolate.... It is good served warm or chilled.
Ingredients
400 gr young coconut (the flesh of 3young coconut, half and scrape the flesh which can be
replace with tin young coconut)
Kelapa muda ( daging dari 3 kelapa muda yang dibelah, jika tidak tersedia kelapa
muda segar dapat diganti dengan kelapa muda kalengan)
2000 ml Coconut water ( from the same coconut or replace with full cream milk)
Air kelapa (dari kelapa yang sama, dapat diganti dengan susu full cream)
250 ml Full cream milk to dissolve the flour
Susu full cream untuk mencairkan tepung
1 cup Wheat flour
Tepung terigu
1 cup Maize flour
Tepung maizena
3 whole Eggs
Telur
500 ml Condensed milk
Susu kental manis
50 gr Butter
Butter
1 tsp Vanilla paste
Sari Vanila
1/2 cup White Rum ( I use Malibu )
Rum ( saya gunakan Malibu)
1/2 cup Drinking Chocolate Powder ( I use Cadburry)
Bubuk minuman coklat (saya pakai Cadburry, dapat diganti dengan Milo )
1/2 cup Kenari ( replace with walnut if it is not available), soaked in hot water then peel the
skin then sliced.

Method :
- Bring to boil the coconut water, add the butter until melted
- Didihkan air kelapa kemudian masukkan butter sampai mencair.
- Dissolve all the flour with full cream milk, add the whole egg. Mix well avoid any lump.
- Cairkan tepung dengan susu full cream dan masukkan telur, aduk rata jangan sampai ada gumpalan
- Pour in the mixture into the sauce pan, put the heat down.
- Masukkan cairan tepung ke dalam panci, kecilkan api
- Slow but constantly stir the mixture to avoid any lump.
- Aduk terus secara perlahan supaya tidak menggumpal
- Add in the condensed milk, keep stirring for a few minutes
- Masukkan Susu kental manis, aduk terus sampai beberapa menit
- Add the meat of the coconut, stir
- Masukkan daging kelapa, aduk
- Put in the Kenary or walnut, stir and then add the drinking chocolate. Keep stirring on low heat for another 10 minutes.
- Masukkan kenari atau walnut, aduk kemudian masukkan bubuk minuman coklat. Aduk terus dengan api kecil selama 10 menit.
- Place in individual mould, glass or other container.
- Masukkan ke dalam mangkok kecil, gelas atau tempat lainnya
- Serve Chilled or warm.....
- Dapat dihidangkan dingin atau hangat.....
Pudding is ready......
